Pork Satay With Peanut Sauce
- Marinade:
- 1 small onion, chopped
- 1 inch piece of ginger root
- 2 galic cloves
- 1 tsp Chinese chili sauce
- juice from one large lime
- t tbsp brown sugar
- 1 tbsp vegetable oil
- 1-3 pork tenderloins
- Peanut Lime Sauce:
- 1/4 cup peanut butter (or 1/3 cup peanuts)
- 1/4 cup soy sauce
- 3 Tbsp fresh lime juice
- 2 tsp rice vinegar
- 3 Tbsp chopped cilantro
- 1 Tbsp brown sugar
- 1/2 tsp Chinese chili sauce
- Soak bamboo skewers in water for at least 30 minutes. Add all marinade ingredients to a food processor and process until pureed. Transfer to a medium sized bowl. Trim all fat from pork, then cut into 1/2 inch strips in lengths suitable to be threaded onto skewers. Add to bowl with marinade and toss to combine. Cover and allow to marinate for 2 hours. In the meantime, rinse food processor and use to combine all sauce ingredients. Sauce can be made up to 3 days ahead. When ready to cook pork, thread onto skewers and grill for about 2 to 3 minutes per side until cooked through. Serve with sauce.
