Oat Cakes
- 3 scoops vanilla protein powder
- 2 C whole wheat flour
- 1/2 t salt
- 1 t baking soda
- 1 t cinnamon
- 1/2 t nutmeg
- 1 C warm H20
- 1/2 C dried blueberries
- 4 C rolled oats
- 1+1/4 C apple sauce
- 1/2 C Splenda
- 1 T Molasses
- 1 t vanilla
- 3 eggs
- 1 C dried cranberries
- 1+1/2 C raisins
- t=teaspoon
- T=tablespoon
- C=cup
- Optional: decrease wheat flour to 1+1/2 cup, and add 1/2 cup ground flaxseed. Also, consider adding 3/4 C chopped walnuts to the mixture after adding the raisins and dried cranberries. Not authentic to how Starbucks serves them, but yummy all the same!
- Oven 350
- Greased 13x9 inch baking dish
- Sift together in large bowl the first six ingredients (protein powder, wheat flour, salt, baking soda, cinnamon and nutmeg).
- Puree warm water and blueberries, then mix the puree into the rolled oats in a separate small bowl.
- In another small bowl, whisk the liquid ingredients plus Equal (apple sauce, Equal, molasses, vanilla, eggs).
- Mix all together into large bowl containing the dry ingredients.
- Add to this mixture:
- 1 C dried cranberries
- 1+1/2 C raisins
- Spread mixture into greased 9x13 inch pan.
- Sprinkle the top with lightly with rolled oats
- Bake 25-30 minutes, or until pau.
