Spiced Raspberry Muffins
- 2 1/4 C flour, plus 1 Tbsp
- 1/2 C sugar
- 3 tsp baking powder
- 1 tsp cinnamon
- 1/8 tsp freashly ground nutmeg
- 1 tsp salt
- 1 egg
- 1 1/2 C milk
- 1/2 C oil
- 1/4 tsp vanilla
- 1/2 tsp orange zest
- 2 Pkgs fresh raspberries
- raw sugar
- Preheat oven to 400 degrees.
- Coat a muffin pan with spray oil.
- In a small bowl, add the raspberries and a tablespoon of flour and gentley stir together. Coating the berries with flour will keep them from sinking while the muffins bake.
- Mix together all the dry ingrediants in a large bowl. In a seperate small bowl mix together egg, milk and oil. Mix together the dry and wet ingrediants and stir till just combined. Add orange zest and fold in the flour coated raspberries.
- Fill each muffin cup to the top with the batter. Spinkle raw sugar on top of each muffin.
- Bake 20 minutes.
