Sesame And Ginger Crusted Salmon
- 1 lb salmon (skin on, boneless)
- 1/4 cup sesame seeds
- 3 cloves garlic
- 1 Tbsp Coarse Ground Black Pepper
- 2 Tbsp Ginger
- 1 tsp sesame oil
- 1 tsp Olive Oil
- 1/4 cup Soy Sauce
- 1/4 cup Cooking Sherry
- - Marinate salmon in cooking sherry and soy sauce for 30 minutes.
- - Prepare sesame crust by combing chopped garlic, ginger, sesame seeds, pepper, sesame oil, and olive oil in bowl.
- - Apply as a paste to marinated salmon.
- - Add additional olive oil to skin side of salmon.
- - Apply olive oil to grill to prevent sticking.
- - Place salmon crust side down on grill for 2 to three minutes.
- - Once crust is seared (dark brown), turn salmon over, and cover the grill (assuming charcoal), and dampen fire. Let cook an additional 5 minutes, or until desired doneness.
- - Garnish salmon with Cilantro leaves, lime and orange wedges.
