Sesame And Ginger Crusted Salmon

  1. - Marinate salmon in cooking sherry and soy sauce for 30 minutes.
  2. - Prepare sesame crust by combing chopped garlic, ginger, sesame seeds, pepper, sesame oil, and olive oil in bowl.
  3. - Apply as a paste to marinated salmon.
  4. - Add additional olive oil to skin side of salmon.
  5. - Apply olive oil to grill to prevent sticking.
  6. - Place salmon crust side down on grill for 2 to three minutes.
  7. - Once crust is seared (dark brown), turn salmon over, and cover the grill (assuming charcoal), and dampen fire. Let cook an additional 5 minutes, or until desired doneness.
  8. - Garnish salmon with Cilantro leaves, lime and orange wedges.
