Mufalatta Pork Burgers
- I lb of pork chunks with some fat. (cut from a leg or shoulder is ideal)
- 4 slices of thick cut bacon
- 1/4 cup grated Parmesan cheese.
- 1 small red onion
- 1 Tablespoon turmeric
- Salt
- Pepper
- Plus:
- Thin sliced ham or proscuitto
- Provolone cheese
- Kaiser rolls
- (Hold for assembly)
- Put all of these ingredients inn the food processor and pulse together til fully mixed.
- 1 1/2 Cups Green Olives, Pitted
- 1/2 Cup Calamatta Olives (or Black) Pitted
- 1 Cup Gardiniera (Pickled Cauliflower, carrots, celery, Pepperoncini)
- 4 Tbsp. Capers
- 5 each Fresh Garlic cloves,
- 2 Tbsp. dried oregano
- 2 Tbsp. Crushed red pepper flakes
- 3 Tbsp. Red Wine Vinegar
- A few grinds of black pepper
- Put all of the garlic, half of the olives, pickled vegetables and the seasonings in the food processor with 1/2 cup olive oil and pulse to a fine chop.
- Roughly chop everything else and stir together with a cup of REALLY good peppery olive oil.
- Let those flavors hang out and marry for a while, overnight or a week.
- Now it's Party time!
- Make those patties about 1/2 inch thick (6). Grill for about 5 minutes on each side.
- Put a few spoons of olive salad on the bottom of the roll, ham on that, burger on that, cheese on burger and top with a mound of olive salad.
- It's messy and drippy and OOOH so good. Step away from the car and enjoy.
