La Bamba Casserole
- 1t.25 oz can whole green chiles, drained
- 1 tb. grnd turkey breast
- 1tup chopped onion
- 2tsp chili powder
- 1/2-1tsp ground cumin
- 1/4tsp salt
- 2tarlic cloves, minced
- 1t0-oz can diced tomatoes & green chiles
- 2tup frozen whole kernel corn, thawed
- 1t6oz can fat-free refried beans
- 1 1/2 tup shredded cheddar cheese
- 1tup chopped tomato
- 1/2tup chopped green onions
- DIRECTIONS
- 1.treheat oven to 375u0b0F - coat 8-9" square baking dish with cooking sprayt
- 2.tut green chiles in half lengthwise & arrange in bottom of square baking dish.
- 3.teat lg. nonstick skillet coated with cooking spray over med-hi heat. Add turkey, onion, chili powder, cumin, slat, and garlic. Saute 5 min. stirring to crumble. Add diced tomatoes - cook 5 min. or until liquid evaporates.
- 4.tpoon turkey mixture over chiles. Top with corn. Carefully spread refried beans over corn. Sprinkle cheese over beans. Bake 375u0b0F for 30 min. Let stand 5 min.
- 5.top with chopped tomatoes & green onions.
