Latka'S With A New Twist
- Latkas
- 1 small to med. zucchini
- 4 large potatoes
- 2 small onions
- 2 eggs
- approx. 1/4 cup. matzo meal
- sprig of Rosemary
- Salt and pepper to taste
- Cold pressed olive oil (in sprayer to start).
- condiments in small serving dishes:
- Unsweetend applesauce
- Whole Cranberry Sauce
- Goat cheese beat with Yoghurt
- Tapanade (just black olive paste)
- hot or medium Salsa
- Grate in a food processor
- onions, zucchini and potatoes.
- Place into a large bowl,
- add eggs
- stir and add matzo meal,Rosemary,salt and pepper
- Spray a non stick large heavy skillet with olive oil
- scoop mixture in tablespoonfulls
- onto the hot skillet. Once the heat is sizzling add some more olive oil from the bottle..(not a lot)..turn once..when well browned transfer to a rack on a baking sheet in the oven (300f)to keep hot a crisp. Serve on a platter surrounded by assorted spreads.
