Latka'S With A New Twist

  1. Grate in a food processor
  2. onions, zucchini and potatoes.
  3. Place into a large bowl,
  4. add eggs
  5. stir and add matzo meal,Rosemary,salt and pepper
  6. Spray a non stick large heavy skillet with olive oil
  7. scoop mixture in tablespoonfulls
  8. onto the hot skillet. Once the heat is sizzling add some more olive oil from the bottle..(not a lot)..turn once..when well browned transfer to a rack on a baking sheet in the oven (300f)to keep hot a crisp. Serve on a platter surrounded by assorted spreads.
