Warm Sweet & Sour Red Cabbage
- 1/2 head red cabbage
- 1/4 cup vinegar
- 1 small onion, diced
- 1/4 cup brown sugar
- 1 teaspoon prepared mustard
- salt & pepper
- 1/2 package bacon
- Cook and crumble bacon and set aside.
- Wash, quarter and thinly slice the red cabbage. Cook with 1/2 cup water and 1/4 cup vinegar, covered, for 20-25 minutes.
- Meanwhile in a separate pan slowly cook onion in a little oil or bacon grease. Once cooked, add brown sugar, mustard, salt and pepper.
- When the cabbage is done cooking, add all the liquid from the cabbage pot to the onion mixture and simmer for 5 minutes. Pour back over the cabbage.
- Serve warm. Add the bacon just before serving to keep it a little crunchy.
- Better the next day. I always cook it the night before a party and then reheat.
