Warm Sweet & Sour Red Cabbage

  1. Cook and crumble bacon and set aside.
  2. Wash, quarter and thinly slice the red cabbage. Cook with 1/2 cup water and 1/4 cup vinegar, covered, for 20-25 minutes.
  3. Meanwhile in a separate pan slowly cook onion in a little oil or bacon grease. Once cooked, add brown sugar, mustard, salt and pepper.
  4. When the cabbage is done cooking, add all the liquid from the cabbage pot to the onion mixture and simmer for 5 minutes. Pour back over the cabbage.
  5. Serve warm. Add the bacon just before serving to keep it a little crunchy.
  6. Better the next day. I always cook it the night before a party and then reheat.
