Grandma'S Blueberry Salad
- For Salad
- 1 16-oz. can blueberries* with juice
- 1 8 1/2-oz. can crushed pineapple* with juice
- 1 3-oz. package vegetarian black cherry gelatin
- 1 3-oz. package vegetarian raspberry gelatin
- 2 c. boiling water
- For Topping
- 1 8-oz. package cream cheese
- 1/2 c. sugar
- 1 pint sour cream
- 1/2 t. vanilla
- 1/2 c. chopped nuts
- Drain blueberries and pineapple, reserving juice. Dissolve gelatin in boiling water. Combine pineapple and blueberry juices and add 1 cup of juice to gelatin. Stir in drained fruit and pour into dish. Refrigerate until firm.
- Soften cream cheese and fold in sugar, sour cream, vanilla, and nuts. Spread over salad and top with extra nuts.
- *Other fruit may be substituted.
