Cucumber-Avocado Salad With Margarita Dressing
- 2 Tbsp Tequila
- 1 Tbsp Triple Sec
- Juice from 2 Limes
- 1 small clove Garlic, minced
- 1/2 tsp minced fresh Ginger
- 1/2 tsp Sugar or Honey
- 1/4 tsp Cumin
- 1/4 tsp Crushed Red Pepper
- 4 Tbsp Olive Oil
- Pinch Kosher Salt
- 1 Cucumber, thinly sliced on the bias
- 1 Avocado, sliced into thin wedges
- 1 Vidalia or other Sweet Onion, thinly sliced
- 3 Cups Mixed Greens
- Cilantro for serving
- In a medium bowl, whisk together first ten ingredients. Taste and adjust seasonings to taste.
- Toss Cucumber, Avocado, and Onion in the dressing and refrigerate at least 30 minutes, but no more than six hours. Remove from fridge and let sit at room temperature for fifteen minutes, Divide greens among six plates and spoon Cucumber-Avocado mixture over top, being sure to include plenty of dressing. Sprinkle with additional Kosher Salt, if desired.
