Southwestern Beef Brisket
- 1 fresh beef brisket (3 lb.)
- 1 1/4 tsp. salt, divided
- 1/2 tsp. pepper, divided
- 2 Tbsp. cooking oil
- 1 1/2 c. water
- 1 (8 oz.) can tomato sauce
- 1 small onion, chopped
- 2 Tbsp. red wine vinegar
- 1 Tbsp. chili powder
- 1 tsp. dried oregano
- 3/4 tsp. ground cumin
- 1/2 tsp. garlic powder
- 1/8 to 1/4 tsp. ground red pepper
- 3 medium sweet red peppers, cut into strips
- 1 1/2 c. sliced carrots (1-inch chunks)
- Season beef with 1 teaspoon salt and 1/4 teaspoon pepper.
- In a Dutch oven, heat oil; brown the beef on both sides.
- Combine water, tomato sauce, onion, vinegar, chili powder, oregano, cumin, garlic powder, red pepper and remaining salt and pepper; pour over meat.
- Cover and bake at 325u0b0 for 2 hours.
