Banana Cupcakes
- 2 1/4 c. sifted flour
- 2 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1/2 c. shortening
- 1/4 c. sour milk or buttermilk
- 1 c. sugar
- 2 eggs
- 1 tsp. vanilla extract
- 1 c. mashed ripe bananas
- 2 or 3 bananas
- Sift together flour, baking powder, soda and salt.
- Use electric beater.
- Beat shortening until creamy.
- Add sugar gradually and continue beating until light and fluffy.
- Add eggs, one at a time, beating after each addition until fluffy.
- Stir in vanilla.
- Add flour mixture alternately with milk and bananas, a little at a time, beating after each addition until smooth.
- Put into well-greased cupcake pan.
- Bake at 375u0b0 for 25 minutes. Frost with your favorite frosting.
- Makes 18 to 20 cupcakes.
