Steele Cut Oatmeal Cookies
- 1 cup butter
- 1 cup flour + 3/4 cups flour (1-3/4 cups total)
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1-1/4 cups packed brown sugar
- 1/2 cup granulated sugar
- 2 eggs
- 2 teaspoons vanilla
- 2 cups uncooked steele cut oatmeal
- 1 cup raisins
- In a large mixing bowl, beat the butter on medium to high speed for 30 seconds.
- In a smaller bowl, stir together 1 cup of flour, baking soda, salt, and cinnamon. Add mixture to the buttery mix.
- Add brown sugar, white sugar, eggs and vanilla to mix. Blend 1-2 minutes or until all ingredients are thoroughly mixed.
- Stir in oats and 3/4 cup flour.
- Fold in raisins (if desired).
- Drop by rounded teaspoons 2 inches apart on an ungreased cookie sheet.
- Bake at 350u0b0 for 10-12 minutes or until lightly browned around the edges.
- Cool on wire rack.
