Southwestern Pasta Salad
- 1 box 13.5 oz. Whole Grain Penne Pasta
- 1/2 tsp. garlic powder
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 cup mayonaise
- 3 Chipotle Peppers from a can(chopped)
- 1 red bell pepper (chopped)
- 1 15oz. can chopped tomatos with diced pepper & garlic (drained well)
- 1 15 oz.can whole kernal corn (drained)
- 1 15 oz.can black beans (rinsed and drained well)
- Cook pasta according to directions. Rinse with cold water and drain well.
- Toss pasta with garlic powder, salt, pepper and set aside.
- Chop 3 chipolte peppers well and mix with mayonaise. Set aside.
- In large glass bowl mix together chopped bell pepper with tomatos, corn, & black beans. Add the pasta and mayonaise mix and toss.
- Can be served immediatly.
