Scallops With Grapefruit Butter

  1. Butter:
  2. Heat wine over medium hi heat, add shallots, stir and cook for 5 mins until no liquid in pan. Add grapefruit juice and orange juice and cook until reduced to 1/4 cup. Whisk in butter a tblsp a time.
  3. Scallops:
  4. SEason with salt and pepper both sides. Heat oil unitl smoking then add 1/2 scallops. cook scallops 1 to 1.5 minutes perside until bottoms brown. Add butter and 1/2 thyme shaking pan to ensure butter throughout. add lime juice. Tilt pan and spoon juice onto scallops. Repeat for second set of scallops.
  5. FinishReheat sauce adding grapefruit segments mixing throughly. Add parsley, mix again, and pour over scallops.
