Scallops With Grapefruit Butter
- Grapefruit Butter;
- 1 cup white wine
- i large diced shallot
- 1 cup ruby grapefruit juice
- 1/4 bitter orange juice
- 6 tbls salted butter
- Scallops:
- 16 sea scallops
- 1/2 tsp salt
- 1/2 tsp fresh ground black pepper
- 1 tbls extra virgin olive oil per batch of scallops
- 2 tbls unsalted butter
- 2 fresh tyhme sprigs
- 2 tbls lime juice
- Finish dish; 1 cup grapefruit segments 2 tbls chopped parsley
- Butter:
- Heat wine over medium hi heat, add shallots, stir and cook for 5 mins until no liquid in pan. Add grapefruit juice and orange juice and cook until reduced to 1/4 cup. Whisk in butter a tblsp a time.
- Scallops:
- SEason with salt and pepper both sides. Heat oil unitl smoking then add 1/2 scallops. cook scallops 1 to 1.5 minutes perside until bottoms brown. Add butter and 1/2 thyme shaking pan to ensure butter throughout. add lime juice. Tilt pan and spoon juice onto scallops. Repeat for second set of scallops.
- FinishReheat sauce adding grapefruit segments mixing throughly. Add parsley, mix again, and pour over scallops.
