Turkey Chili
- 1 medium onion, diced
- 1 medium green bell pepper, diced
- 2 tablespoons minced garlic
- 1/2 pound ground organic turkey breast meat (may sub tofu or tempeh)
- 1-2 teaspoon ground cumin
- 1/2 teaspoon ground chili powder
- 3 tablespoons chopped fresh oregano
- 2 cups organic cooked chili beans (any beans you like)
- 1 14 ounces can diced organic tomatoes with juice
- 4 cups chicken stock (homemade is the best but organic will be fine)
- 1 cup diced mixed vegetables (your choice squash, zucchini, broccoli etc.)
- Salt and pepper (adjust seasonings to taste)
- 1. Heat a large soup pot to medium and add onion, pepper, and garlic.
- 2. Cover and let sweat until soft.
- 3. Add ground turkey and saute until cooked through.
- 4. Add cumin, oregano and chili powder and cook 2 minutes.
- 4. Stir in remaining ingredients and bring to a simmer.
- 5. Simmer 20 minutes.
- 6. Adjust salt and pepper and other spices to your taste
- 7. The flavor will develop if made one day in advance.
