3 Bean Soup
- 2 c. dried navy beans
- 1 c. dried red beans
- 1 1/2 c. dried garbanzo beans
- 2 qt. chicken broth
- 1 or 2 chopped onions
- 1 c. sliced carrots
- 1 c. sliced celery
- 2 Tbsp. parsley flakes
- 2 tsp. dried basil
- 1 tsp. dried oregano
- 1 tsp. salt
- 1/2 tsp. pepper
- 3 c. chopped fresh spinach (4 oz. approximately)
- grated Parmesan (optional)
- Sort and wash beans.
- Place in large pot and cover with water. Soak 8 hours.
- Drain and return beans to pot.
- Add all ingredients but spinach and cheese.
- Bring to a boil and simmer covered about 2 hours or until beans are tender.
- Add spinach; cook 10 to 15 minutes.
- Sprinkle servings with Parmesan.
- Yield: approximately 3 quarts.
- Very hearty and healthy!
- Freezes well.
