3 Bean Soup

  1. Sort and wash beans.
  2. Place in large pot and cover with water. Soak 8 hours.
  3. Drain and return beans to pot.
  4. Add all ingredients but spinach and cheese.
  5. Bring to a boil and simmer covered about 2 hours or until beans are tender.
  6. Add spinach; cook 10 to 15 minutes.
  7. Sprinkle servings with Parmesan.
  8. Yield: approximately 3 quarts.
  9. Very hearty and healthy!
  10. Freezes well.
