Carrot 'N Crumb Cake
- 45 Nilla wafers, finely rolled (about 2 c. crumbs)
- 1/2 c. all-purpose flour
- 1 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1 tsp. ground cinnamon
- 1/2 tsp. ground cloves
- 1/2 tsp. nutmeg
- 1 1/4 c. Planters peanut oil
- 1/2 c. granulated sugar
- 4 eggs
- 1 1/2 c. grated raw carrots
- 1/2 c. Planter's pecan pieces, chopped
- confectioners sugar
- In a medium bowl, combine Nilla wafer crumbs, flour, baking powder, baking soda, salt, cinnamon, cloves and nutmeg; set aside. In a large bowl, with electric mixer at medium speed, blend Planters peanut oil and sugar.
- Add eggs, one at a time, beating well after each addition.
- Gradually add flour mixture, beating well.
- Stir in carrots and Planters pecan pieces.
- Pour into well greased and floured 9 cup fluted tube pan.
