Seafood Penne With White Wine Sauce
- 1/4 cup olive oil
- 4 oz. jar of sundried tomatoes in oil chopped
- 4 garlic cloves chopped
- 1/4 lb. prosciutto chopped
- 1 med purple onion in chunks
- 1red pepper in chunks
- 1yellow pepper in chunks
- 1 bag broccoli florets
- 1 1/2 lbs lge.uncooked shrimp peeled and deveined
- 1 1/2 lbs scallops
- 1-1 1/2 cups white wine
- 4 oz. clam juice
- 1/4 cup italiian seasoning
- red pepper flakes and salt and pepper to taste
- 1 lb box whole wheat penne
- Saute first four ingredients over med/med high heat until fragrant(make sure to use oil from sun dried tomatoes too) Add next three ingredients and continue to cook until just wilted. Add broccoli and seasonings and cook for one minute. Add shrimp and scallops and white wine.Cook until shrimp turn pink(about 2 minutes) Add clam juice. Add to cooked penne and toss. Sprinkle with chopped fresh basil and parmesan cheese. Serve and enjoy!
