Chivo In Crock Pot

  1. Wash goat (put in bowl of water with lemon and smoosh around)
  2. Season goat and pork with oregano, salt, and pepper
  3. put oil in large pot - enough to comfortable cover bottom of pan so that meat is easily browned, and heat oil to hot.
  4. Add sugar - let sugar turn brown.
  5. Add meat and brown on all sides.
  6. Remove meat and put in crockpot
  7. Add onions and garlic to brown/carmelize.
  8. Add wine and simmer a couple of minutes.
  9. Add 3/4 water and stir.
  10. Pour onion mixture into crock pot on top of meat.
  11. Cover and cook on low 10 hours.
  12. Server over rice
  13. Great addition would be tostones or platano maduro.
