Lamb Burgers W/ Creamy Grapefruit-Cucumber Relish
- Burgers:
- 1 pound ground lamb
- 1/4 cup Greek feta cheese
- 2 tablespoons sun-dried tomatoes, packed in oil, drained
- and minced
- 1 clove garlic, crushed
- 1/2 teaspoon ground oregano
- 1/4 teaspoon ground white pepper
- Relish:
- 1/3 cup minced Persian cucumbers
- 1/3 cup chopped tomatoes
- 1/8 cup chopped Kalamata olives
- 2 tablespoons minced green onion
- 1 tablespoon Hellman's light mayonnaise
- 1 tablespoon grapefruit juice
- 1 teaspoon grapefruit zest
- 1/2 teaspoon celery salt
- 1/4 teaspoon ground white pepper
- 4 fresh Kaiser rolls
- (split & brushed with a small amount of Greek olive oil)
- Heat barbeque or grill pan (skillet w/ ridges).
- *If using grill pan, heat oven broiler.
- Mix together the lamb, feta, sun-dried tomatoes, garlic, oregano, salt & pepper.
- Divide burger mixture and form into 4 patties.
- Grill for 5-6 minutes per side until lamb is cooked through (155 degrees on meat thermometer).
- If using barbeque, grill rolls for 30 seconds until golden brown. If using grill pan, brown rolls in broiler.
- To make relish, mix all ingredients together and chill, stirring occasionally, for 30 minutes.
- To serve, divide lamb burgers between rolls and top with relish.
