Smoked Salmon Fettuccini
- 4 oz smoked salmon or more
- 1 bunch green onions, chopped, including green ends
- 1 bunch spinach, or small bag of prewashed spinach,
- remove stalk, tear spinach leaves in half
- 1 pound fettuccini or other pasta
- 10 large mushrooms, sliced, raw (optional)
- grated or shaved parmesan
- Optional: prawns 1/2 pound
- DRESSING:
- Juice 1/4 lemon
- 1/2 cup mayo
- 1/2 cup sour cream
- pepper
- Cook pasta in salted water. Reserve one cup water to be used if recipe needs more moisture...1T at a time.
- Drain and add spinach to colander to slightly wilt spinach.
- Add all ingredients except parmesan to serving bowl. Lightly toss until pasta is coated with dressing.
- Add parmesan and serve.
- Can be served warm or cold. Great the 2nd day.
