Vegan Date Bread
- 2 T. Earth Balance
- 1 T. orange zest
- 6 oz. coffee, cooled
- 1 c. dates, chopped
- 1 1/2 t. EnerG egg replacer mixed with 4 T. Water
- 1 c. brown rice syrup
- 2 T. orange juice
- 3/4 c. whole wheat flour
- 1 1/2 c. all-purpose flour
- 1 t. baking soda
- 1/2 t. cinnamon
- 1/4 t. nutmeg
- 1/4 t. ginger
- Pour coffee over dates, soak and then drain, reserving both dates and coffee. Beat together egg replacer and brown rice syrup. Add orange juice and coffee and mix well. In a separate bowl, combine the dry ingredients. Add to the liquid ingredients and mix to combine. Stir in dates. Pour into a loaf pan lined with parchment and greased. Bake at 350 degrees for 60-70 minutes until a toothpick comes out clean.
