Marinades For Meat
- Red wine marinade useful for all meats:
- 1/2 cup dry red wine
- 2 tsp dijon
- 1 crushed clove of garlic
- 1/2 tsp chopped fresh thyme
- Yogurt marinade (chicken and lamb):
- 1/2 cup Greek yogurt
- 1 crushed clove of garlic
- 1 small fresh red chili seeded and chopped
- 1/2 tsp sweet paprika
- 2 tsp chopped fresh mint
- Honey soy marinade (pork, beef and chicken):
- 1 TBS warm honey
- 1/3 cup soy sauce
- 1 tsp sesame oil
- 2 tsp freshly grated ginger
- 2 cloves crushed garlic
- Balsamic vinegar marinade (chicken and lamb):
- 1/4 cup lemon juice
- 2 TBS olive oil
- 1/4 cup balsamic vinegar
- 2 cloves crushed garlic
- 3 tsp brown sugar
- 2 tsp chopped fresh thyme
- Spicy rub (fish, chicken, beef or lamb):
- 2 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp turmeric
- 1 tsp sweet paprika
- 1 tsp garlic salt
- 1/4 tsp chili powder
- Marinade for 1 night. The rub can be stored in an airtight container for several months.
