Grilled Avocados Stuffed With Walnut Chicken Salad
- 3 avocados
- 2 tablespoons fresh lemon juice
- 1 1/2 tablespoons olive oil
- 1 tbsp butter
- 1 cup walnut pieces
- 2 tbsp honey
- 3/4 cup mayonnaise
- 1 tbsp lemon juice
- 4 2/3 cups cooked skinless chicken breast, cut into small cubes
- 2 cups celery, finely chopped
- 3 scallions, finely chopped
- 1 1/4 cup red grapes, quartered
- Salt and pepper to taste
- TO PREPARE THE WALNUTS:
- Melt the butter over moderate heat. Add the walnuts and sautee for one minute. Stir in the honey and cook for about 3 minutes until the walnuts are coated and slightly caramelized. Remove from heat and set aside to cool.
- TO PREPARE THE AVOCADOS:
- Cut avocados in half and remove seed. Drizzle with fresh lime or lemon juice and brush lightly with olive oil. Place cut-side down on barbecue for 2 to 3 minutes. Season with salt, to taste.
- TO PREPARE THE SALAD
- In a large bowl, gently stir the mayonnaise, lemon juice, cubed chicken, scallions, grapes and cooled walnuts. Add salt and pepper to taste.
- Stuff grilled avocados with the salad mixture.
- Taste. Thrill your wife and impress the kids. Smile until next week.
