Grilled Avocados Stuffed With Walnut Chicken Salad

  1. TO PREPARE THE WALNUTS:
  2. Melt the butter over moderate heat. Add the walnuts and sautee for one minute. Stir in the honey and cook for about 3 minutes until the walnuts are coated and slightly caramelized. Remove from heat and set aside to cool.
  3. TO PREPARE THE AVOCADOS:
  4. Cut avocados in half and remove seed. Drizzle with fresh lime or lemon juice and brush lightly with olive oil. Place cut-side down on barbecue for 2 to 3 minutes. Season with salt, to taste.
  5. TO PREPARE THE SALAD
  6. In a large bowl, gently stir the mayonnaise, lemon juice, cubed chicken, scallions, grapes and cooled walnuts. Add salt and pepper to taste.
  7. Stuff grilled avocados with the salad mixture.
  8. Taste. Thrill your wife and impress the kids. Smile until next week.
