Chunky Chicken Blt Salad
- 2 T.tijon mustard
- 2 T.talsamic or red wine
- vinegar
- 6 T.tlive oil
- 3 T.tresh basil, thinly
- sliced
- salt and freshly ground
- black pepper to taste
- 2 c.toached or grilled
- chicken breast, diced
- 1/2 "
- 4 tomatoes, skinned,
- diced 1/2 "
- 6 tlices bacon, cooked
- crisp, and diced 1/2 "
- 2 c.tashed spinach,
- mesclun, arugula, or
- other salad leaves,
- coarsely chopped
- 4 slices multigrain bread
- or, country bread
- 1. To make the dressing, mix together the mustard and vinegar in a bowl.. Slowly pour in the olive oil while mixing. Add the basil and season with salt and pepper to taste.
- 2. Stir in chicken, tomatoes, bacon and salad leaves and toss gently to coat with dressing.
- 3. Assemble chicken salad on thick slices of multigrain bread, country bread.
