Chicken Spanish Rice Casserole

  1. Simmer chicken in water, salt and seasonings.
  2. Remove meat from bones in large pieces.
  3. Place in large greased casserole. Quarter sausage and fry in skillet.
  4. Scatter over chicken.
  5. In shortening, fry raw rice until rice is golden brown, stirring constantly.
  6. Drain rice
  7. and sprinkle over chicken and sausage. Add onions, garlic and tomato sauce to hot broth.
  8. Pour over chicken and rice.
  9. Cover.
  10. Bake 1 1/4 hours in 325u0b0 oven.
  11. Heap hot drained peas around edge. Garnish with pimento.
  12. Serves 6 to 8.
