Quick Coq Au Vin
- 4 bacon strips
- 2 lbs boneless skinless chicken thighs
- 1/4 coconut or almond flour
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 T oil or cooking fat or choice (if not using bacon drippings)
- 2 cups quarterd button or cremini mushrooms
- 1 cup pearl onions (or 1 cup chopped yellow onion)
- 4 cloves garlic, peeled and minced
- 2 cups chicken broth
- 1 cup dry red wine
- 1 T tomato paste
- 2 fresh thyme sprigs
- Heat a large dutch oven over medium heat. when hot, add bacon and cook until crispy. Remove bacon from pot.
- Toss chicken with flour, salt and pepper. cook chicken in bacon grease over medium heat until chicken is browned on all sides. When finished remove chicken from pot.
- Add mushrooms, onion and garlic to dutch oven and cook over medium heat until mushrooms are slightly softened.
- Add chicken broth, wine, tomato paste and thyme and mix well. Add chicken. Cover, reduce heat to medium low and cook for 10-15 minutes or until chicken is cooked through.
- Break the bacon into bite size pieces and mix into the coq au vin. Serve hot.
