Darn Good Turkey Chili
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 3 garlic cloves, minced
- 1 pound ground turkey
- 6 white mushrooms, sliced
- 1 1/2 teaspoons fresh oregano
- 1 1/2 teaspoons ground cumin
- 1 teaspoon cayenne pepper
- 1/4 cup chili powder
- 2 bay leaves
- 2 tablespoon unsweetened cocoa powder
- 1 teaspoons salt
- 1/2 teaspoon season-all
- 1/4 teaspoon ground cinnamon
- 1 28-ounce can diced garlic and onion tomatoes (with juices)
- 3 cups low-sodium, low fat chicken broth (use more/less depending on your consistency preference)
- 1/2 can of beer
- 1 8-ounce can tomato paste
- 1 15-ounce can small white beans, rinsed, drained
- 1 15-ounce can kidney beans, rinsed, drained
- Heat oil in large pot on medium high heat. Add onion and garlic; saute about 5 minutes, until tender. Add turkey; stir until no longer pink, breaking up with edge of spatula. Add mushrooms. Stir in oregano, cumin, cayenne pepper, chili powder, bay leaves, cocoa powder, salt, season-all, and cinnamon. Add tomatoes with juices, chicken broth, beer, and tomato paste. Bring to a boil; reduce heat; simmer 30 minutes stirring occasionally.
- Add beans and simmer at least 20 minutes. Discard bay leaves.
- Serve with sharp cheddar cheese, and sour cream (low fat or fat free if you are watching calories.
- Can be prepared 1 day ahead. Cover and refrigerate. Rewarm over medium-low heat.
