Tuscan Chicken Mozzarella
- 4 boneless, skinless chicken breasts (about 5 oz. each)
- 1/2 cup shredded reduced-fat mozzarella cheese
- 4 thin slices prosciutto (about 2 oz.)
- 1 tsp. Italian seasoned breadcrumbs
- 1. Preheat oven to 350u0b0F. Coat shallow baking dish with nonstick cooking spray.
- 2. Cut slit about 3 inches long and a few inches deep in the thickest part of each breast, being careful not to cut all the way through the chicken. Fill each breast with 2 tablespoons cheese and 1 slice prosciutto. Secure with toothpick; place in prepared baking dish. Brush olive oil over stuffed chicken breasts. Sprinkle evenly with breadcrumbs.
- 3. Cover with foil; bake 30 minutes. remove foil; cook 10 minutes more or until golden brown. Drizzle with pan juices.
