Italian Blt Salad
- 2 hearts of Romaine lettuce, torn
- 2 medium tomatoes, cut in bite size pieces
- 2 cups of mozzarella cheese cubes
- 1 pound thick peppered bacon, cooked and crumbled
- 1/2 cup crumbled feta cheese
- 1/2 cup black olives
- 3 tablespoons capers
- 3/4 cup light mayonnaise
- 1/4 cup ketchup
- 1 teaspoon garlic salt
- 1 teaspoon black and red pepper blend
- 2 tablespoons red wine vinegar
- Garnish: Italian croutons
- In large salad bowl, combine lettuce, tomatoes, mozzarella cheese, capers, bacon, feta cheese and black olives. Toss gently. Set aside.
- In a blender, add mayonnaise, ketchup, garlic salt, pepper blend and red wine vinegar. Blend until smooth.
- Pour over salad. Toss lightly. Serve on individual serving plates. Garnish with Italian croutons.
