Scallops In White Wine With Breadcrumbs
- Dry pack scallops (1 - 1 1/2 lbs)
- dry white wine
- for the breadcrumbs:
- 1 pkg. Royal Lunch Cookies(sometimes called Milk Lunch Cookies) - crushed
- 1/2 cup chopped walnuts
- 1/2 cup chopped pignoli nuts
- 1/3 cup fresh parsley-chopped
- 3-5 crushed garlic cloves
- 1/3 cup olive oil
- 1 stick butter

- Combine the breadcrumbs, walnuts and pignoli nuts in a large bowl - set aside.
- In a large, non stick skillet, saute the garlic in the butter and olive oil until lightly golden. Immediately remove from heat.
- Stir in breadcrumb mixture and add parsley. Toss until moistened (you may add more olive oil, if needed).
- In a pyrex dish place scallops and add white wine until bottom of pan is moistened. Sprinkle crumbs over top and spritz with olive oil.
- Bake at 375 for 20 minutes. Serve with lemon wedges and enjoy!
