Roast Chicken Asiago
- whole chicken, split
- 1 tsp. seasoning salt
- 4 cloves garlic, minced
- 1 Tbs. rosemary, minced
- 1 Tbs. thyme, minced
- 1/4 cup melted butter
- 1/4 cup sherry
- 1 Tbs. chili oil
- 1/2 cup grated Asiago cheese
- Once you have split the chicken, pat it dry with a paper towel.
- In a small bowl combine the seasoned salt, garlic, rosemary and thyme. Set the bowl aside.
- In a medium bowl whisk together the melted butter, sherry and chili oil.
- Liberally brush this mixture over the entire chicken.
- Sprinkle the seasoning mixture over the chicken.
- Sprinkle the grated Asiago cheese over the chicken. Let the chicken rest 30 minutes at room temperature.
- Pre-heat oven to 375 degrees.
- Place the chicken in a roasting pan.
- Place in oven and roast 45 minutes or to desired doneness.
- Remove from oven and let rest 5 minutes before carving and serving.
