Roast Chicken Asiago

  1. Once you have split the chicken, pat it dry with a paper towel.
  2. In a small bowl combine the seasoned salt, garlic, rosemary and thyme. Set the bowl aside.
  3. In a medium bowl whisk together the melted butter, sherry and chili oil.
  4. Liberally brush this mixture over the entire chicken.
  5. Sprinkle the seasoning mixture over the chicken.
  6. Sprinkle the grated Asiago cheese over the chicken. Let the chicken rest 30 minutes at room temperature.
  7. Pre-heat oven to 375 degrees.
  8. Place the chicken in a roasting pan.
  9. Place in oven and roast 45 minutes or to desired doneness.
  10. Remove from oven and let rest 5 minutes before carving and serving.
