Cajun Chicken
- 6 chicken thighs
- 1 can black beans
- 4 slices dry rub bacon diced
- 1 large onion diced
- 2 stalks celery diced
- 2 clove garlic minced
- 1 can chicken broth
- 1/4 cup cooking sherry
- 1/4 tsp white pepper
- 1/2 tsp hot sauce
- 2/3 cup uncooked rice
- 1/2 cup flour
- 4 Tbsp olive oil
- brown bacon in a skillet and remove. discard all but i tbsp bacon fat. add olive oil to skillet. lightly flour chicken and fry 3-5 minutes on each side until golden. remove chicken. add onion celery and garlic to pan and sautee until tender. add sherry and deglaze the pan. add beans and hot sauce and pepper and heat till bubbling. add chicken broth and bacon bits and bring back to boil. add chicken and rice and cover. cook un low medium heat 25-30 minutes and serve
