Xmas Bread
- 2-cakes yeast
- 1-pint milk
- 1-cup shortening (Crisco)
- 1-cup sugar
- 1teas salt
- 2 eggs well beaten
- 1 1/2 tablespoons ground cardamon
- 7 cups sifted flour
- 1 lb. seedless raisens
- 1 1/2 lbs. candied fruit
- 8 oz of whole candied cherries
- 1 cup lightly chopped walnuts
- Glaze for bread (optional)
- Soften yeast in lukewarm water. Scald and cool milk. Cream shortening,sugar,and salt together; add beaten eggs and cardamon. To Luke warm milk add softened yeast and 3 cups of flour; beating until smooth. Add creamed mixture and remaining flour. Mix until smooth adding more flour if necessary. Add fruit,sprinkled with flour. Let dough rise until doubled in bulk, stir down and let rise again until about doubled. Turn dough onto floured board, divide into three portions and shape into loves. Place in greased bread pans and let rise until doubled in bulk. Bake in moderate oven at 350 degrees F for 50-60 minutes. Glaze with white icing (optional). Cool on racks when done. Can be frozen and used when desired. Slice and toast buttered for a real treat.
