Oatmeal Cake With Coconut Pecan Frosting

  1. Cake:
  2. Mix the oatmeal with the boiling water, stir and cover.
  3. Mix the remaining ingredients then stir in the oatmeal mixture.
  4. Grease and flour a 9x9 pan.
  5. Pour batter into pan and bake at 350 for 23-25 minutes.
  6. Coconut Pecan Frosting:
  7. Combine all ingredients and mix thoroughly.
  8. Carefully spread frosting over the top of the cake.
  9. Broil until coconut is just brown.
  10. Watch very closely - it doesn't take long.
  11. Cool, slice and serve.
