Apple Roll
- 2 c. natural applesauce
- 1/2 tsp. cinnamon
- 4 egg whites
- 3/4 c. sugar
- 2/3 c. flour
- 3/4 tsp. baking powder
- 1/4 tsp. salt
- 1 tsp. vanilla
- 1/4 c. powdered sugar
- Preheat oven to 400u0b0.
- Spray a 15 x 10 x 1-inch jelly roll pan with Pam.
- Line with wax paper and spray again.
- Spread applesauce evenly over pan and sprinkle with cinnamon.
- Beat egg whites until foamy.
- Gradually add sugar; beat until thick and light.
- Set aside.
- Sift together flour, baking powder and salt.
- Fold into egg whites; stir in vanilla.
- Spread evenly over applesauce. Bake 15 to 18 minutes until golden.
- Let set 5 minutes.
- Turn apple side up on a paper towel sprinkled with powdered sugar. Remove waxed paper and crusty edges.
- Roll lengthwise and sprinkle with powdered sugar.
- Makes 10 servings with 130 calories and .2 gram fat per serving.
