Creole Sauce
- 1/4 Cup butter
- 1/2 Cup diced yellow onion
- 1/2 Cup diced celery
- 1 Tbsp. minced parsley
- 2 Tbsp. minced garlic
- 1/2 tsp. basil leaves
- 1/2 tsp. cayenne
- 1/4 tsp. white pepper
- 1/2 tsp. black pepper
- 1 1/2 tsp. salt
- 2-3 Bay leaves
- 1 tsp. sugar
- 1/4 Cup chopped green onions
- 1 28oz. can diced tomatoes
- 1 15oz can tomato puree
- plus water to make 2 cups
- 3 Cups chicken stock
- 2 tsp. Crystal hot sauce
- Melt butter in heavy pot.
- Add: yellow onion and next 12 ingredients. Cook until bell pepper turns bright green and onion starts to turn transparent. Add remaining ingredients, bring to a boil, reduce heat to simmer, cook 45-60 minutes. Stir occasionally.
