Wes' Comfort Mac And Cheese

  1. Pre-heat oven to 375F and place sausages on a glass cake pan on the middle rack and cook until interior temp reaches 165F.
  2. Pre-cook the pasta according to the directions on the box for firm pasta while the sausage cooks.
  3. Let the sausage cool until you can handle them and then slice them into 1/2 inch pieces.
  4. In a saucepan, saute the peppers, onion and garlic when finished add the milk and warm it on a low heat. Add about 75% of the cheese to the warm milk and let it melt slowly, stiring constantly.
  5. Pour the pasta into a roasting pan (12"x16"x2 1/2") and add the sausage. Mix together and then add the milk mixture. Once mixed use the remainder of the cheese to sprinkle on the top. Bake it in the oven at 400F for about 45 minutes to 1 hour.
