Appezöller Biberli
- For Dough
- 5 cups bleached, all purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 2 teaspoons ground cinnamon
- 2 teaspoons ground coriander
- 1 teaspoon ground cloves
- 1/2 teaspoon freshly grated nutmeg
- 1/2 teaspoon ground ginger
- 1 cup honey
- 1/2 cup unsulfured molasses
- 2/3 cup granulated sugar
- 4 tablespoons water
- 2 teaspoons freshly grated lemon zest
- For Filling
- 4 cans almond paste
- 6 teaspoons freshly grated lemon zest
- 8 tablespoons kirsch
- Make dough
- In a bowl whisk together flour, baking powder, baking soda, and spices.
- In a large saucepan heat honey, molasses, and sugar over moderately low heat, stirring just until sugar is dissolved. Remove pan from heat and stir in water and zest. Stir in flour mixture and cool dough.
- Make filling
- In a food processor pulse almond paste with zest and kirsch until mixture forms a ball adding water, 1/2 teaspoon at a time if mixture resists forming a ball.
