Waldorf Salad

  1. Salad dressing:
  2. Combine juices.
  3. Beat egg and thin with some of the juice mixture.
  4. Heat remaining juice mix to boiling.
  5. Mix sugar and cornstarch, whisk into boiling juice mixture.
  6. Add prepared egg mix and whisk into thickened juices.
  7. Cook until thickened, and then chill.
  8. Fruit mixture:
  9. Wash apples and leave skin on for color.
  10. Cut apples into bite-sized chunks.
  11. Cut celery into pieces slightly smaller than apples
  12. Optional: toast walnuts.
  13. Combine walnuts with sugar/salt mix.
  14. Just before serving:
  15. Combine apples, celery and walnut mix.
  16. Whip heavy cream and fold into dressing just before serving.
  17. Combine fruit mix with salad dressing.
