Waldorf Salad
- Salad dressing:
- 1/3 C pineapple juice
- 1/4 C orange juice (no pulp)
- 4 Tbsp lemon juice
- 1/3 C sugar
- 2 1/2 Tsp cornstarch
- 1 large egg
- 3 Tbsp heavy cream
- Fruit mixture:
- 4 lbs apples (sweet-tart-crisp)
- 1 lb celery hearts
- 1/2 C walnuts (chopped coarse)
- 2 Tbsp sugar
- 1 Tsp salt
- Salad dressing:
- Combine juices.
- Beat egg and thin with some of the juice mixture.
- Heat remaining juice mix to boiling.
- Mix sugar and cornstarch, whisk into boiling juice mixture.
- Add prepared egg mix and whisk into thickened juices.
- Cook until thickened, and then chill.
- Fruit mixture:
- Wash apples and leave skin on for color.
- Cut apples into bite-sized chunks.
- Cut celery into pieces slightly smaller than apples
- Optional: toast walnuts.
- Combine walnuts with sugar/salt mix.
- Just before serving:
- Combine apples, celery and walnut mix.
- Whip heavy cream and fold into dressing just before serving.
- Combine fruit mix with salad dressing.
