Sweet Rye Bread
- 1 pkg. yeast
- 1/2 c. water
- 1 c. sour milk
- 1/3 c. brown sugar
- 1/4 c. molasses
- 1/4 c. shortening
- 1 Tbsp. salt
- 1 tsp. anise seed
- 1/2 tsp. soda
- 1/2 c. cold water
- 1 Tbsp. orange rind
- 2 1/2 c. rye flour
- 3 to 4 c. white flour
- Soften yeast in 1/2 cup water; set aside.
- Combine the next 6 ingredients in a saucepan.
- Bring to a boil and cool to lukewarm. Combine soda and cold water.
- Add this to milk mixture.
- It will bubble up.
- Put all in large bowl and add remaining ingredients. Knead until smooth.
- Place in greased bowl.
- Cover and let rise in a warm place until double in size.
- Punch down and let rest 30 minutes.
- Divide in two parts.
- Form into loaves and place in well-greased pans.
- Cover and let rise until light, about one hour.
- Bake at 350u0b0 for 50 to 60 minutes.
