Snickers Cheesecake
- Crust
- 30 graham cracker squares, finely ground
- 1 stick butter, melted
- 1/2 teaspoon ground cinnamon
- Combine all above ingredients, press into the bottom and 1 inch up the sides of a spring form pan. Refrigerate at least 5 minutes. Preheat oven to 325 degrees.
- Filling
- 1 lb cream cheese
- 3 eggs
- 1 cup sugar
- 1 pint sour cream
- splash of vanilla
- 4 snickers bars, cut in half lengthwise, then 1/4" across width
- Cream cream cheese, add eggs 1 at a time, add sugar and cream, add sour cream and vanilla. Scrape sides of bowl to make sure everything is mixed well. Try not to over mix. Spread cut up snickers on top of the graham cracker crust. Pour filling over snickers and crust. Set the cheesecake pan on a large piece of aluminum foil and fold up the sides around it. Place the cake pan in a large roasting pan. Pour boiling water into the roasting pan until the water is about halfway up the sides of the cheesecake pan. Place in the oven. Bake for 45 min. Remove entire roasting pan and spring form pan from the oven. Leave the spring form pan in the roasting pan on the counter for 30 minutes. Remove spring form pan from the roasting pan, cover and place in refrig for at least 4 hours or longer. Remove cake from pan.
- Topping
- Chop 4 snickers bars in a food processor. Spread on top of cheesecake. Drizzle with Caramel and fudge sauce.
