Autumn Hash
- 2 c potatoes, diced
- 1 c celeriac, diced
- 1 tbsp butter
- 1 small red onion
- 2 garlic cloves
- 1/2 bell pepper diced
- 1 celery stalk, sliced
- 1 c butternut squash, diced or shredded
- 1 lb extra lean ground beef or veal
- 1.5 c corn kernels
- salt and ground pepper
- 1/4 c milk
- 2 tbsp fresh parsley
- 1.5 c creamy Dofino Havarti
- 1. Boil potatoes and celeriac until tender
- 2. in large skillet - melt butter and saute butter, onion,garlic pepper, celery and squash for 3-4 min
- 3. Add meat
- 4. Mix in corn and season
- 5. Transfer to an oven-safe dish
- 6. Mash potatoes and celeraic with milk butter and seasonings
- 7. Spread mashed potatoes over mixture and top with cheese
- 8. Bake in oven for 20 min at 375 C
