Reuben Meat Loaf(Makes 8 Servings)
- 1 (8 oz.) can sauerkraut
- 1 lb. lean ground beef
- 2 1/2 c. soft bread crumbs
- 1 (12 oz.) can corned beef, broken apart
- 1 large egg
- 3 Tbsp. chopped parsley
- 1/2 tsp. minced garlic
- 4 oz. Swiss cheese, shredded (about 1 c.)
- 1 (6 oz.) can tomato paste
- 3 Tbsp. water
- 2 tsp. prepared horseradish
- 1/2 tsp. vegetable oil
- Preheat oven to 375u0b0.
- Rinse, drain and coarsely chop sauerkraut.
- Crumble ground beef.
- In a large bowl, place sauerkraut, ground beef, bread crumbs, corned beef, egg, parsley and garlic;
- mix until well blended.
- Pat one-half of the mixture into a shallow 1 1/2-quart round baking dish, forming a slight rim along outer edge of dish.
