Mom'S Shellfish Minestrone

  1. Peel shrimp, reserving shells,devine and half lengthwise, chop onion, mince garlic and celery, half carrots lenghtwise and cut inot thin slices. Cook shrimp shells with 2 tablespoons oil in a pot for 3 minutes. Add clam juice and chicken stock. Simmer 18 minutes. Strain broth. In the same potcook onion, garlic, celery and carrots in 1 tablespoon oil 5 minutes. Add herbs and tomatoes, breaking up tomatoes with spoon. Add broth, simmer 20 minutes. Add macaroni and cook 5 minutes. Quarter scallops add with shrimp and simmer 5 minutes.
