White Bean Chicken Chili

• 1 Store bought rotissiere chicken deboned meat loosly shredded. 2 Carrots
• 2 celery ribs and one small onion finely chopped. 2-3 tblspoons olive oil. I tsp Chili powder
• two tsp Cumin
• 1/2 tsp cayenne pepper. 3 cans white Beans
• cannellini or great northern.(Drained and Rinsed) Salt and pper light to taste. 1/2 small can chili's
• 1 can jalapenos. I can corn drained
• 1 can stewed tomatoes. 1 quart non fat non dairy creamer. 2 cups or moe grated cheddar. ( Cabot extra sharp.)

1. Over low heat sautee, onions, carrots and celery until onions turne translucent. Add spices, mix. Add shredded chicken, non dairy creamer and stewed tomatoes, chilis and jalapenos. When mixture is hot add corn. Serve in bowls top each with chedder cheese. (Chedder chese can also be mixed in).
2. Graet sid ewould be bacon chedsder corn bread or bacon chive cheddar hushpupies
