Mandel Bread
- 3 eggs
- 1 c sugar
- 1 c extra light olive oil
- 1 1/2 c flour
- 2 tsp almond extract
- 1/2 tsp salt
- 1 c sliced or slivered almonds
- 3/4 c chocolate chips
- cinnamon-sugar
- Beat eggs well.
- Slowly add sugar. Add oil. Then add flour. Add the rest of the ingredients.
- Let the mixture sit for at least an hour.
- Preheat oven to 350
- Form the mixture into two loaves on baking pan lined with parchment paper or non-stick aluminum foil. Sprinkle with cinnamon-sugar and bake for 30 minutes.
- Remove from oven and with a sharp knife, cut the loaves in slices.
- Place the pieces one side down on the baking pan and bake for 10 minutes. Repeat with the other side for an additional 10 minutes.
- Notes:
- Any vegetable oil will work. I like cooking with olive oil
- If you want a crispier, biscotti-like texture, bake each side an additional 5 minutes
- An easy way to form the loaves is by using old-fashioned metal ice trays without the inserts. Line them with parchment paper or foil and the loaves will easily lift out for slicing.
