  1. In a large pot add lentils, rinsed and drain. Add water and bring to boil...spooning off foam as lentils start to cook. Add onion, garlic, ginger, tomato and simmer 5 minutes. Add the tumeric, cumin and salt and continue to simmer 5 mins. Add carrots and let simmer 15 mins.
  2. Meanwhile, heat 1/4 cup butter in skillet, add onion, garlic, mustard and cumin seeds and cook at med/high heat until browned.
  3. Add frozen green beans and let simmer another 5 mins.
  4. Add butter mixture from skillet. Add lemon juice.
  5. Adjust salt to taste. Serve with brown rice.
