Baked Chicken Dinner In One Pan
- 2 broilers (approximately 2 lb. each), cut lengthwise
- 3 young carrots, peeled and cut in circles (1/8-inch)
- 1 tsp. salt
- 1 c. half and half cream
- 6 medium potatoes, peeled and cut in quarters
- 3 small onions, peeled and cut in quarters
- 1/4 tsp. pepper
- 1/4 lb. butter
- Place the vegetables in a roasting pan which has a tight fitting cover and will be large enough to accommodate all of the chicken, too.
- Place the chicken halves over the vegetables. Sprinkle with salt and pepper; pour all the cream over the chicken. Dot with squares of butter.
- Cover tightly and bake at 350u0b0 for 1 hour or until you can pierce the thickest part of the chicken with sharp fork.
- Uncover and place under the broiler for 5 minutes or until the chicken is a golden brown.
- Serve piping hot.
- Serves 4.
